Summer is here, and Mojitos are my refreshing drink of choice. But what could make it even better? Turning it into a shimmering pink glass of fabulousness with pink Spirdust®!
You can serve a Mojito a couple ways - over ice, or up in a martini glass. But no matter what, the flavor medley of lime, mint and rum are exactly what you need on that hot Saturday afternoon by the pool. Or that hot Saturday afternoon, where you wish you had a pool, but a Mojito and a blow up kiddie pool are the best you can do. No matter - your Flamingo Mojito will shimmer in the sunshine the same.
Here's what you need:
handful of mint leaves - plus an extra sprig for topping
simple syrup, sugar, agave or stevia.. my go to is 2 packets of Truvia
Tear up your mint leaves and drop them into a martini shaker with the juice from about 1/2 a lime. Use a muddler to squash up the lime and mint. This releases the oils and flavors from the mint. And it makes you look like a badass bartender. Add your sweetener, rum and fill with ice. Shake like a mad person.
Now take your other glass - a highball or similar, fill with ice, keep the strainer on your martini shaker and pour your concoction in. I like doing it this way, rather than the way some bartenders just dump the whole thing into a glass. When you shake and dump, you leave all the bits of crushed up mint in the glass, which inevitably clogs your straw, or gets stuck in your teeth. Straining will solve this for you and you can still add a sprig of pretty mint after the fact. Top off with club soda, your mint, and of course a festive flamingo straw.
